Two new recipes last week – I was proud.

1) BBQ Chicken Burgers – These were very, very yummy, and I’m not a huge BBQ sauce fan.  We made them on the weekend and saved the extras for mid-week grilling ease.  I skipped the bonus BBQ sauce on top, but Tim lathered his up and enjoyed.  We’ll definitely be making these again.

2) Roasted Garlic Pesto Chicken Pizza – Such, such high hopes.  I don’t think I’m destined (as Tim suggested mid-meal) to make my own pizza crust from yeast.  The flavors here are awesome and the it has great potential for someone who knows how to make good homemade pizza crust.  I’ll definitely be making it again, but with store bought crust.  We had sandwiches made out of the leftover chicken, pesto and mozz (plus a little roasted red pepper and sauteed onion) later in the week.  They were very tasty – assemble and then broil to melt the cheese.

    You can buy excellent pizza crust at Whole Foods–They keep it uncooked behind the counter where they sell their own pizza. Delicious and no one would ever know you didn’t make it yourself 🙂
